Freezer Meals for Matt: Pizza Pasta Casserole

I don’t know why I never thought of this!!!!!   Such a good idea, especially if you are sick of plain pasta with meat sauce or spaghetti and meatballs!!  For those of you who have picky eaters in your home, this might be a really great meal for your family!!  It’s easy to add a few veggies (chopping them up pretty small and adding them into your dish) without people noticing!

Thankfully, I don’t have that problem, Matt will eat pretty much anything, but I figured this was a pretty easy recipe that would make a great freezer meal!

Pizza Pasta Casserole:

8 oz. Rotini pasta, cooked & drained

16 oz. pizza sauce

1 c. shredded mozzarella cheese

1/2 c. shredded parmesan cheese (fresh)

1/2 lb. mild sausage, cooked, drained & cooled

1/2 pkg. Turkey pepperoni, cut in quarters

1/2 green pepper, diced

1/2 c. onion, diced

1. Preheat oven to 350*, lightly spray a 9×13″ baking dish.

2. Combine all ingredients and pour into prepared baking dish.

3. Bake 20-25 min., serve immediately (or if freezing; cool completely and pour into freezer containers)

How super easy is that???  And the best part is, you can add whatever you want!  If you like Ham or Canadian Bacon, Ground Beef, Mushrooms, Black Olives, etc. you can just add your favorite pizza toppings! 🙂 Genius!!!!!!!! 🙂
